CHIVE PATTIES

Why not try flavoring your ground meat patties with chopped chives now and then? It gives a very fine, mild onion taste and it also looks nice, even if looks aren't everything. This way of making patties is simple and practical.
Serves 4
3 tablespoons dry, white, unflavored bread
or dried breadcrumbs
0.8 cup sparkling water
1 lb ground beef
1 egg
1 teaspoon salt
some white pepper
2½ tablespoons butter or margarine
0.4 cup finely chopped chives
butter or margarine for frying
some water or bouillon
Let the bread or breadcrumbs swell for a while in the sparkling water. Blend in ground beef, egg, salt and pepper and work until the mixture is pliable. Spread it out to a thin cake on a large carving board that you've first rinsed with water. Stir the fat until smooth and flavor with chives.
Spread the chive butter over half of the ground beef cake, then fold the unspread part over as a cover. Cut out rectangular patties and fry them on both sides in some fat in a frying pan. Take them up and keep warm. Whisk out the pan with some water or bouillon and pour this over the patties.
Serve with new potatoes boiled with dill and a salad.
