Filled Meat Loaf - Färslimpa med fyllning

FILLED MEAT LOAF
Färslimpa med fyllning

Ground meat is a faithful staple in the Swedish everyday cooking, so every way of renewing and varying it is welcome.

Serves 4

3 tablespoon dried breadcrumbs
0.2 cup cream, 12% fat or the like, + 0.4 cup water
4 very fresh carrots
salt
5.3 oz ground beef
12.3 oz ground pork
salt, white pepper, paprika
1 egg + 1 egg yolk
3 tablespoons finely chopped onion
1 pickled gherkin
1 red bell pepper
0.4 cup finely chopped parsley
1 tablespoon butter or margarine

2 tomatoes


Let the breadcrumbs swell for about 10 minutes in the liquid. Scrape the carrots and precook them whole in lightly salted water for about 5 minutes. Work the ground meat together and add spices, egg, onion and breadcrumb mixture. Chop the gherkin very finely, trim the bell pepper well and finely dice it. Work these ingredients into the meat together with the finely chopped parsley. Split it in 2 even-sized pieces.

Brush a bread pan with melted fat. Put half of the meat in an evenly thick layer in the bottom and the whole carrots on top. Spread remaining meat over the carrots and smoothen it out. Put the pan in the oven at 350F for about 50 mimutes. If it gets to dark on the surface, cover with a lid or aluminum foil.

Unmould the meat loaf and decorate with tomatoes when serving with quickly fried haricots verts and a tomato and onion salad with a vinaigrette.
