FILLET OF PORK WITH HERB SAUCE
Fläskfilé med örtsås
So easy to make, so lovely to serve, you almost have to say about this. The meal is on the table in about 25 minutes.
Serves 4
Approx 1 1/3 lbs fillet of pork
2 tablespoons butter or margarine
1 teaspoon salt
some paprika
0.8 cup water
Sauce:
2 tablespoons butter or margarine
3 tablespoons flour
0.8 cup pan juices
0.8 cup cream, 15% fat or the like
paprika
garlic salt
2 tablespoons very finely chopped parsley
For serving:
green peas
Trim the fillet and cut in rather thick slices. Brown the fat and then brown the meat until nicely golden on both sides. Flavor with salt and paprika and pour on the water. Let the meat simmer for a couple of minutes, then take it up and keep warm.
Boil the peas in lightly salted water.
Make the sauce. Brown the fat in a saucepan, dust with the flour and dilute with bouillon to a thick, shiny sauce. Boil for about 4 minutes, then add cream and flavor with paprika and garlic salt. Stir in the parsley.
Serve the meat on a warm serving plate with the peas. Drizzle some sauce over the meat and serve the rest separately. Boiled or baked potatoes or rice and a salad are good to serve with it.
