French Chicken - Fransk kyckling

FRENCH CHICKEN
Fransk kyckling

Fragrant and tempting, this chicken dish with the taste of France will make your dinner a success. It's festive and very easy to make, and you can make it well in advance.

Serves 4

1 chicken, approx 2 lbs
0.4 cup oil
2 chopped onions
1 crushed garlic clove
2 green bell peppers, diced
0.6 cup dry white wine
6 tomatoes in pieces
1 tablespoon tomato paste
1 bay leaf
1 teaspoon oregano
salt, white pepper


Cut the chicken in 4 pieces and brown them in oil in a pot until nicely coloured. Add onions, garlic and bell peppers and stir. Add wine, tomatoes, tomato paste, bay leaf, oregano, salt and pepper. Cover and let simmer slowly for about 30 minutes or until the chicken is tender. Flavor to taste and add more spices if necessary.

Serve with e.g. boiled rice, a salad and some good bread.
