SUMMERY VEGETABLE CASSEROLE
Sommargryta med grönsaker

Soon, at least soon here in Sweden, there is time to enjoy the fresh, home-grown vegetables. Use them in salads, soups, stews, oven-baked or in gratins. Here's a recipe for a lovely, completely vegetarian casserole.

Serves 4

Approx 2 lbs mixed fresh vegetables like
cauliflower, carrots, beans, large radishes,
squash/zucchini, peas, leek, onions
0.6 cup water
some whole white peppercorns
1 crushed bay leaf
1 fresh thyme sprig or a little dried thyme
some parsley sprigs
salt or herbal salt
some butter


Rinse and trim all the vegetables. Cut them as you want to - slices, dice or pieces. Bring the water to a boil in a shallow sauté pan, add the vegetables and bring them to a boil. Add Spices and put a lid on it. Let it boil slowly for about 15 minutes, really just steaming, on low heat until just done, still crispy and crunchy. Flavor with more spices if needed. Add a small dab of butter and serve straight away, piping hot.
