Herb-Flavored Lamb Stew - Örtkryddad lammgryta

HERB-FLAVORED LAMB STEW
Örtkryddad lammgryta

Lamb is excellent with most Spices. Try flavoring with herbs, fresh or dried.

Serves 4

2 lbs bone-in lamb like brisket, 
shoulder or back
1½ teaspoons salt
some White or black pepper
½ teaspoon basil
½ teaspoon Rosemary
1 garlic clove
2 tablespoons tomato paste
0.8 to 1.2 cups bouillon (I use chicken)
1 small head of cauliflower
4 tomatoes
approx 14 oz frozen green beans
1 tablespoon fresh lemon juice
some lemon zest


Cut the meat in rather large cubes. Brown it without fat, preferably. Add herbs, garlic and tomato paste and dilute with some of the bouillon. Continue cooking on low heat for about 30 minutes.

Trim the cauliflower and split it in florets. Scald and skin the tomatoes and cut them in wedges. Add cauliflower, tomatoes and beans. Dilute with remaining bouillon. Allow to boil slowly for Another 15 minutes or so, until meat and vegetables seem suitably done. Add some lemon juice and sprinkle with lemon zest. Flavor more if necessary.
