SPICY HONEY CAKE
Kryddkaka med honung

This coffee cake is extra juicy and delicious thanks to the fruit. That also makes it keep fresh longer (if you don't eat it all at once, that is, then it doesn't matter how much fruit you put in it - ask me). The honey makes it reasonably sweet, not overly sweet.

Makes 1 cake in a pan holding 8 cups

5.3 oz butter or margarine
0.4 cup honey
1.6 cups wholemeal flour
0.8 cup flour
2 teaspoons baking powder
2 teaspoons ground cardamom
1 teaspoon ground cloves
1 teaspoon ground cinnamon
0.4 cup milk
2 eggs
0.8 cup chopped nuts or almonds
4 tablespoons finely chopped candied orange peel
or figs
3 ripe bananas
1 apples

Heat the oven to 350F. Grease and flour the 8-cup cake pan.

Stir the fat until light and fluffy. Warm the honey and pour it in, then stir until fluffy. Mix flour, baking powder and spices. Stir in the milk and add eggs alternating with flour mixture. Add nuts or almonds and orange peel or figs.

Mash the bananas. Peel the apple and dice finely. Add the fruit to the batter, pour in the greased cake pan and bake in the lower part of the oven for about 1 hour (try with a cake tester which should come out dry). Since the cake contains so much fruit, it might need a little more time in the oven than 1 hour.

Take out the cake and gently loosen around the edges. Leave in the pan for a while, then gently unmould onto a rack and allow to cool.
