Yellow Hearts - Gula hjärtan

YELLOW HEARTS
Gula hjärtan

These are yellow, brittle hearts with taste of orange juice and grated orange zest. You can roll out the dough and use a cookie cutter or simply roll it into small balls and flatten them with a fork.

Makes approx 90 cookies

7 oz butter or margarine
0.4 cup sugar
1 teaspoon vanilla sugar
0.4 cup soured cream
0.4 cup fresh orange juice
grated zest from 1 orange
1 egg yolk
2.2 cups flour
0.4 cup potato flour (potato starch)
1 teaspoon bicarbonate of soda


Stir the room-tempered fat. Add sugar, vanilla sugar, soured cream, orange juice and orange zest and stir well. Add egg yolk. Mix flour and bicarbonate (you can sift together the potato starch and the bicarbonate for a good result).

Add the flour mixture and blend the dough together. Leave in a cold place for about 1 hour so it's easier to roll out. You can roll it out immediately too, but I always wait. If you want to do it straight away, you have to drop out the dough on paper-lined plates using two spoons.

Roll out the dough to a thin cake and measure out hearts or roll into balls. Put them on paper-lined baking plates and bake at 395F for about 10 minutes or until nicely colored and done. Allow to cool for a while on the plates.
