Flavorful Currant Cookies - Korintkakor med sting

FLAVORFUL CURRANT COOKIES
Korintkakor med sting

This cookies are easy to bake and nice and tender. Make a large batch of the dough and keep it in the freezer and bake now and then!

Makes approx 65 cookies

7 oz butter or margarine
0.3 cup sugar
1 teaspoon cinnamon
½ teaspoon ginger
½ teaspoon cloves
0.3 cup currants
a little more than 1.6 cups flour


Stir the fat until smooth and fluffy. Add sugar, cinnamon, ginger and cloves. Mix currants and flour, add this to the butter mix and quickly work to a dough. Leave in a cold place for at least 1 hour.

Take out the dough and split it in two. Roll out each to an evenly thick "sausage". Cut in even-sized pieces and roll out each piece to a small, round ball. Put them on paper-lined baking plates and press them with a fork so that they're slightly flattened and patterned.

Bake at 390F for about 8 minutes or until nicely colored and done. Allow to cool on the plate, loosen them and put them on a rack.
