ONION BELL PEPPER TARTE
Löktårta med paprika

This delicious tarte/pie with onions and bell peppers is enough for a meal in itself, with a large bowl of salad. You can serve it as a lunch, dinner or supper.

1 onion tarte, serves approx 6

1.2 cups flour
3½ oz butter or margarine
½ teaspoon salt
2 to 3 tablespoons cold water

Filling:
1 red or green bell pepper
3 to 4 small leeks
1 tomato
1 tablespoon butter or margarine
some salt
some white pepper or paprika
0.4 cup cream, 15% fat or the like
0.8 cup milk
2 eggs


Chop flour, fat and salt together, add water and quickly work the dough. Leave in a Cold place for about 30 minutes.

Rinse and trim the bell pepper and remove all the seeds. Rinse leeks and tomato. Shred the bell pepper and leek and slice the tomato. Melt the fat in a saucepan, add veggies and let them fry slowly on low heat for about 5 minutes. Flavor with salt and pepper.

Heat the oven to 390F. Roll out the dough to a round plate and line a springform pan or ordinary cake pan with it. Make sure it's up around the walls as well. Make a fork pattern around the walls and pre-bake for about 15 minutes.

Put the veggies in the pie shell. Beat cream, milk and eggs and pour this over the veggies. Bake on the lowest shelf of the oven for about 25 minutes or until set and lightly colored. Serve straight away with a salad.
