PARMESAN HERB BREAD
Parmesanbröd med örtkryddor
This round, braided bread looks like a beautiful cake. Not at all difficult to make and a lovely taste, very good with soup or consommé.
1 large bread
1.7 oz active compressed yeast
1.2 cups milk
2 tablespoons oil
2 teaspoons mixed dried herbs like
oregano, rosemary, chervil, tarragon
1 egg
0.6 cup grated parmesan
approx 3 cups flour for baking (I can't explain
it better, it's not ordinary wheat flour but finer
bread)
For brushing:
1 egg white
grated parmesan
dried herbs
cumin
Crumble the yeast in a mixing bowl. Heat the milk with the oil to body heat (in Swedish we call it "finger heat"). Add remaining milk and add salt and herbs. Add egg, cheese and flour, little by little. Work the dough until really smooth and pliable. Dust with some flour and leave to rise on a warm, draught-free place for about 40 minutes.
Take up the dough onto the work surface and knead again until pliable. Split in two and roll out each part to a long, narrow "sausage". Braid the two together to a spiral-shaped braid. Put this on a greased or paper-lined baking plate while starting in the middle and shape it round all the time. Fold in the last, outermost piece under the cake.
Leave on the plate to rise for about 20 minutes. Heat the oven to 390F. Brush the bread with egg white and bake for about 20 minutes, then increase to 440F and bake for another 10 minutes or so until the bread is nicely colored and seems light and baked through.
