LEMON-MARINATED GRILLED FILLET OF BEEF
Citronmarinerad grillad nötfilé

A slice of juicy, fried or grilled fillet of beef is considered a huge culinary experience (and it is). In this recipe the meat is marinated in lemon juice and some other goodies first, and a lemon butter with fresh herbs is served with it.

Serves 4

1 1/3 lbs fillet of beef

Marinade:
fresh juice from 1 lemon
4 tablespoons oil
1 tablespoon Worcestershire sauce
or 1 tablespoon Dijon mustard

Lemon herb butter:
3½ oz butter
2 tablespoons fresh lemon juice
3 tablespoons chopped fresh herbs
like parsley, dill, chives, sage, basil and/or tarragon
some black pepper


Trim the meat well. Make the marinade, put the meat in a small bowl and pour on the marinade. Store cold for at least 4 hours.

Stir the butter until soft, add pepper and the fresh herbs. Shape to a roll and wrap it in plastic foil. Store cold.

Take up the meat, drain and dab it dry. Heat the oven grill or the outside grill and cook it for about 20 minutes if you want it rare, 25 to 30 minutes if you want it more done (pink). Turn occasionally. When ready, leave the meat in peace for about 10 minutes Before slicing it up.

Serve with the lemon butter, baked or roasted potatoes, a salad and/or grilled tomatoes.
