Mushroom-Baked Fillet of Pork - Svampgratinerad fläskfilé

MUSHROOM-BAKED FILLET OF PORK
Svampgratinerad fläskfilé

The lovely pork fillet is excellent with mushroom sauce, so I made a gratin of it all.

Serves 4 to 6

1 to 1 1/3 lbs fillet of pork
butter or margarine
salt, white pepper

Mushroom sauce:
7 oz fresh mushrooms
2 tablespoons butter or margarine
2 tablespoons flour
1.6 cup liquid (cream + pan juices)
1 egg yolk

For baking:
2 tablespoons dried breadcrumbs


Fry the fillet whole in a frying pan for 10 to 15 minutes or for about 20 minutes in the oven at 350F. Sprinkle with salt and pepper afterwards. Whisk out the pan with some water and boil the pan juice together. Reserve the juice. Clean and slice the mushrooms.

Sauté the mushrooms in some fat and sprinkle with flour. Dilute with cream and reserved pan juice. Boil for 3 to 5 minutes, blend in the egg yolk and allow the sauce to cool. Slice the meat and put them in an oven-proof pan, pour the sauce over and sprinkle with breadcrumbs. Bake at 480F for 10 to 15 minutes or until the surface is golden.

Serve with potatoes and a green salad.
