SKIPPER'S STEW
Skepparkalops
This dish was probably once invented by an inventive sailor or a sailor's wife, who maybe just had one heating source to work on. You can make everything in the same pot and then you just serve with some bread.
Serves 4
1 lb boneless beef
3 onions
2 tablespoons butter or margarine
1½ teaspoons salt
6 whole White peppercorns
2 bay leaves
approx 1 lb 8 oz potatoes
1 tablespoon chopped chives
2 tablespoons chopped parsley
Dice the meat. Peel and chop the onions. Melt the fat in a pot and sauté the onions until golden. Add meat, salt, peppercorns and bay leaves. Dilute with enough water to be just on level with the meat. Cover with a lid and boil on low heat for about 1 hour.
Meanwhile, peel and Dice the potatoes. Add them to the pot and boil until all is done, about 30 minutes. Sprinkle with green herbs Before serving with dark bread and a salad.
