MINUTE STEAK STROGANOFF WITH
MUSHROOMS AND TOMATOES
Stroganoff på lövbiff med svamp och tomat
Minute steaks should be prepared quickly and on high temperature, so it's perfect in this quick and easy version of Stroganoff.
Serves 4
2 onions
2 garlic cloves
2 red bell peppers
some butter or margarine for frying
approx 15 middle-sized fresh mushrooms
14 oz minute steaks
0.4 cup tomato paste
2 tablespoons paprika
0.4 cup water
salt, white pepper
some bouillon (optional)
Topping:
2 pickled gherkins
chopped parsley
0.4 cup crème fraîche
Peel and shred onions and garlic. Cut the bell peppers in pieces and sauté until tender and nicely colored. Clean and split the mushrooms and fry until tender and colored. Mix with onions and bell peppers.
Shred the meat and fry on high heat. When it's nicely colored, add tomato paste and paprika and stir. Add mushrooms, onions and bell peppers and water. Flavor to taste with salt and pepper and maybe some bouillon.
Serve right away with pickled gherkins, chopped parsley and crème fraîche.
