MUSTARD-COOKED SPROUTS
Senapsslungad brysselkål
It's always fun with variations on how to cook my darling Brussels sprouts. This is a particularly good one.
8 small servings
1 lb Brussels sprouts
1 oz butter or margarine
0.6 cup heavy cream
1½ tablespoons mustard, a rough but sweet kind
flaked salt
pepper
1 small red onion
Trim the sprouts and boil until tender (but not too tender IMHO) in lightly salted water. Drain.
Melt the fat in a frying pan and pour in the cream when the fat sputters but is still light in color. Bring to a boil and lower the heat, then boil on low heat about 5 minutes. Add mustard, flavor with salt and pepper and add the sprouts.
Serve in a bowl and sprinkle with chopped red onion.
