My fantastic liver stew - Min goda levergryta

MY FANTASTIC LIVER STEW
Min goda levergryta

Serves 4

10.6 oz calf's liver or liver from young beef cattle
5.3 oz smoked side of pork or bacon
2 tablespoons butter or margarine
½ teaspoon salt
white pepper
1 to 2 tablespoons capers
3 to 4 tomatoes
0.4 to 0.8 cup soured cream

parsley
lemon wedges


Shred the trimmed liver and dice the pork (shred the bacon if you use that). Fry liver and pork in the fat in a pot for about 5 minutes. Flavor with salt and pepper and sprinkle with capers. Cut the tomatoes in wedges and blend them into the stew. Pour on the soured cream and do not let it boil after that. Decorate with chopped parsley and lemon wedges.

Serve with boiled potatoes or rice.
