ONION SAUSAGE
Lökfalu på fat

Sausage, like Falu sausage, is among the everyday food and is one of the most used foodstuffs in Sweden. It's always welcome with tips on how to vary it and this is really good. If you have a chance of getting real Swedish Falukorv (it's name protected meaning that it has to have a certain meat content) this dish is superb. And it's so convenient to cook the whole dinner in one single pan in the oven!

Serves 4

8 potatoes
2 onions
1 leek
butter or margarine for the pan
0.8 cup grated cheese
1 teaspoon salt
some dried thyme
0.4 cup milk
14 oz Falu sausage


Brush and peel the potatoes. Cut in very fine shreds. Peel and slice the onions, rinse and shred the leek. Grease an oven-proof pan and alternate layers of potatoes, onions, leek and cheese in the pan. Flavor each layer with salt and sprinkle with thyme. Pour on the milk.

Put in the oven at 440F for about 30 minutes or until the potatoes start to become tender and lightly colored. Take out the pan, pull the skin off the sausage and cut in slices. Put them on top in the pan and put back in the oven for 5 to 10 minutes or until the sausage is heated through and lightly colored.

Serve with grated carrots, bread and mustard.
