After her retirement, my Mom got bored with just being at home and needed to earn some extra money, so she applied for a position as a part-time cook at a parent-owned preschool. At first, she had to follow a special schedule with the meals, but she hadn't been working there for more than a week before they gave her a green light to cook whatever she wanted within the budget. And cooking on a budget was something Mom had done all her life as an adult, so that was no problem for her. I had an evening job at that time, so I went with her to help her out most days. The children loved her and she even got them to eat vegetables and spinach and lots of other stuff that they had never tried. This is a very, very simple fish dish with a ready-made sauce that we can buy to simplify the cooking. It was one of the most popular fish dishes at the preschool "The Sunflower". 

Serves 4

1 1/3 lbs fillets of cod, fresh or frozen
1 cup ready-made lemon sauce for fish (the brand is Kelda,
in case you might get your hands on it)
fresh juice from ½ lemon
grated zest and juice from ½ to 1 orange
1 garlic clove
chopped parsley


Pour the sauce in a shallow pan, stir in the lemon and orange juice and bring to a boil. Thicken the sauce with some flour stirred with cold water. Add the fish, cut in serving-sized pieces, cover and simmer for about 5 minutes (might need longer depending on the thickness of the fish).

Peel and finely chop the garlic and sprinkle it on top together with grated orange zest and parsley.

Serve with boiled potatoes or rice and vegetables.
