PLUM CHICKEN
Plommonkyckling
Chicken with fresh plums is something very tempting. Use the plums you have, if you have any, otherwise buy the plums you want … but a blue kind is to prefer because they make the sauce extra shiny and deliciously red.
Serves 4
1 chicken, approx 2 lbs 7 oz
1½ oz butter or margarine
1 onion
1 lb fresh plums
water, sugar
½ lemon
1 bay leaf
salt, white pepper
Start by splitting the plums and remove the stones. Simmer until tender in some sugared water. Cut the chicken in 4 parts and brown them in fat in a pot. Add chopped onions to the stew and let it fry with the chicken for a few minutes.
Mash the plums, if you wish you can push them through a large meshed sieve straight into the pot. Pour in the juice from the lemon and add bay leaf, some salt and white pepper. Cover with a lid and let simmer slowly for 40 to 45 minutes until the chicken is tender. Flavor to taste and adjust if necessary.
Serve with boiled rice or potatoes and a green salad.
