ITALIAN FENNEL STEW WITH GREMOLATA
Italiensk fänkålsgryta med gremolata

Tasty fennel, and the gremolata is just what it needs to be even tastier.

Serves 4

3 fennels, approx 1 lb 8 oz
2 onions
butter or margarine
1 can whole tomatoes, approx 14 oz
0.8 cup low-fat crème fraîche
1 vegetable bouillon cube
½ teaspoon salt
some black pepper

Gremolata:
grated zest from 1 lemon
0.4 cup chopped parsley
2 finely chopped garlic cloves


Cut the fennels in quarters and peel the onion and cut in wedges. Sauté the onions in fat in a large pot, add the fennel, tomatoes with juice and crème fraîche. Crumble the bouillon cube on top, cover with a lid and boil on low heat for 10 to 15 minutes. Flavor with salt and pepper.

Mix lemon zest, parsley and garlic and sprinkle this over the stew. Serve with rice and/or bread.
