Pork and Bell Pepper Stew - Fläskgryta med paprika

PORK AND BELL PEPPER STEW
Fläskgryta med paprika

This wonderful stew is inspired by the Hungarian kitchen with paprika. If you want it stronger, buy real Hungarian sweet paprika or add some cayenne to the stew.

Serves 4

1 lb boneless pork, e.g. shoulder or ham
4 slices bacon
1 large onion
1 bell pepper
1 garlic clove
1 cup bouillon (I use chicken)
1 teaspoon salt
some white or black pepper
1 to 2 tablespoons paprika
½ tablespoon Maizena or potato flour


Cut the meat in rather large cubes. Shred the bacon and brown it in its own fat in a pot. Brown the meat in the bacon fat, then take it up. Peel and chop the onion, trim the bell pepper and dice it and crush the garlic clove.

Brown it all, the bell pepper just a minute as it mustn't get browned. Add meat, bacon and bouillon. Flavor with salt, pepper and paprika and simmer slowly until the meat is tender, about 20 minutes. Thicken with Maizena or potato flour stirred with some cold water.

Serve with rice, pasta or mashed potatoes and a green salad. This is a favorite.
