Red Lentil Soup with Lemon - Röd linssoppa med citron

RED LENTIL SOUP WITH LEMON
Röd linssoppa med citron

Serves 4

2 onions
4 to 5 garlic cloves
olive oil
1 cup red lentils
approx 4.8 cups bouillon (I use chicken)
1 can crushed tomatoes, approx 14 oz
2 to 3 tablespoons tomato paste
salt, white pepper
a few drops hot tabasco or powdered chili

For serving:
fresh thyme
lemon wedges


Peel and chop onions and garlic. Sautée until shiny and tender in a pot. Add the rinsed lentils and pour on the bouillon. Bring to a boil, cover with a lid and boil until the lentils are tender, about 15 minutes. Skim now and then while cooking.

Add crushed tomatoes and flavor with tomato paste, salt and pepper, and some tabasco or chili if you want some heat.

Serve with a couple of thyme sprigs and lemon wedges, so everyone can flavor their own soup.
