CARROT APPLE OVEN BAKE
Morots- och äppelform i ugn
If you use vegetables and other goodies when they are in season, you can eat cheap, well and good. Here's a dish with apples, onions and carrots.
Serves 4
4 carrots
water, salt
3 tart apples
3 large onions
2 tablespoons butter or margarine
½ to 1 teaspoon salt
some thyme
some basil
5 tablespoons crumbled white bread
0.4 cup liquid from boiling the vegetables
Peel and dice the carrots. Peel and slices apples and onions. Pre-cook the carrots for about 5 minutes in boiling, salted water and drain them. Save some of the liquid. Put the carrots in the bottom of a greased, oven-proof pan.
Heat the oven to 350F.
Sautée the onion until golden and tender in some of the fat. Put sliced apples and onions on top of the carrots and sprinkle with salt, thyme and basil. Pour approx 0.4 cup of the carrot liquid over it all and sprinkle with the white breadcrumbs. Add remaining fat in dabs.
Bake in the oven for about 20 minutes or until heated through, nicely colored and apples and carrots are tender.
Serve as it is or together with meat, fish or sausages.
