Vegetables with Lemon Sauce - Grönsaker i citronsås

VEGETABLES IN LEMON SAUCE
Grönsaker i citronsås

It's not difficult to help people like veggies if they're served with a light, airy lemon sauce. A true delicacy for those who like good food.

Serves 4

1 head of cauliflower, approx 1.9 lbs
2 to 4 leeks
water, salt

Sauce:
2 tablespoons butter or margarine
3 tablespoons flour
1.2 cup boiling liquid
some white pepper
2 to 3 tablespoons fresh lemon juice

1 egg yolk
0.4 to 0.6 cup crème fraîche
parsley


Rinse and trim cauliflower and leek and cut the leek in evenly long pieces. Bring water and salt to a boil in two saucepans.

Boil cauliflower and leek separately until tender, not mushy, about 10 to 15 minutes. Take up the vegetables and drain them. Save the liquid. Keep warm while you make the sauce.

Sizzle fat and flour in a saucepan. Dilute with some liquid from boiling the veggies to a thick, glossy sauce and boil it for at least 5 minutes. Flavor the sauce with pepper and lemon juice. Remove from heat. Stir in the egg yolk first and then the crème fraîche, then gently heat the sauce through.

Pour the sauce over the veggies, sprinkle with parsley and serve right away.
