VINEGAR CHICKEN
Kyckling i vinägersky
4 servings
1 chicken, approx 2 lbs 10 oz
1 teaspoon salt
some black pepper
4 tablespoons butter or margarine
5 shallots or 1 onion
4 tablespoons water
2 tomatoes
2 garlic cloves
1 celery stem
1 fresh thyme sprig or ½ teaspoon dried thyme
1 bay leaf
0.4 cup chopped parsley
0.8 cup red wine vinegar
1 cup red wine
Decoration:
chopped parsley
Cut the chicken in 4 parts and flavor with salt and pepper. Melt 1 tablespoon fat in a pot. Peel and slice the shallots or the onion and add them to the pot with 2 tablespoons water. Let it all simmer for about 10 minutes. Melt 2 tablespoons fat in another pot and brown the chicken well for about 20 minutes.
Dip the tomatoes in boiling water and skin them. Cut the pulp in small pieces that you add to the pot with the onions. Crush the garlic into it. Add trimmed, sliced celery, thyme, bay leaf and parsley. Put the chicken on top of the onions and add remaining water. Let simmer slowly for about 30 minutes until the chicken is done.
Add vinegar and wine and boil until about 0.6 cup remains. Take up the chicken. Beat in remaining fat in the vinegar liquid, pour it over the chicken and serve. Decorate with chopped parsley.
