MUSTARD-BAKED EGGS

Eggs and bacon is a well-known combo, here in a slightly different outfit. If you wish, you can use smoked ham or some kind of smoked sausage instead of bacon. You can make the dish in advance and put it in the oven shortly before it's time to eat.
Serves 4
6 to 8 eggs
Mustard sauce:
2 tablespoons butter or margarine
4 tablespoons flour
1.6 cup milk
2 tablespoons mustard
some white pepper
4 slices bacon
4 tablespoons ripe, strong, grated cheese
Boil the eggs for about 6 minutes. Rinse them in cold water and peel them.
Make the sauce. Sizzle fat and flour together in a small, heavy-bottomed saucepan. Dilute with milk, little by little, to a smooth sauce. Boil it for 4 to 5 minutes. Shred the bacon and quickly fry it in a dry, hot frying pan.
Grease an oven-proof pan, Split the eggs and put them in the pan. Pour the sauce over the eggs and sprinkle with the bacon, then with the grated cheese. Bake in the oven at 480F for about 10 minutes (in the upper part) until nicely colored, the cheese has melted and everything is heated through.
Serve right away, maybe with toast, and a crisp salad.
