FILLET OF PORK DIJON
Fläskfilégryta Dijon
Serves 2
8.8 oz sliced fillet of pork
½ tablespoon butter, margarine or oil
1 thinly wedged red onion
3½ oz split mushrooms
½ shredded red bell pepper
0.2 cup water
0.4 cup low-fat crème fraîche
1 tablespoon Dijon mustard
1 tablespoon chopped fresh thyme
1 teaspoon Chinese soy sauce
Decoration:
fresh thyme sprigs
Brown the meat in the fat and transfer to a pot. Brown onion, mushrooms and bell pepper in the same pan and transfer that to the pot as well. Whisk out the pan with water and pour this in the pot together with crème fraîche, mustard, thyme and soy sauce. Simmer slowly for about 5 minutes.
Serve with potatoes, pasta, or rice and a tossed salad.
