GREEN BEANS WITH ONIONS
Gröna bönor med lök
Serves 4
1 lb green beans, e.g. haricots verts
1 onion
a splash of olive oil
1 tablespoon butter or margarine
1 garlic clove
fresh thyme
a little fond diluted in 0.2 cup water
salt, black pepper
a large bunch parsley
Quickly boil the beans in lightly salted water - about 4 minutes is well enough. Pour off the water and set aside. Finely chop the onion and sautée until tender in oil and butter or margarine without browning. Add garlic and fresh thyme towards the end. Pour on the fond and put in the beans, stir well and flavor to taste with salt and pepper. Quickly bring to a boil for just a minute or so. The beans should still be crisp and just heated through. Add parsley and stir just before serving.
If you don't have any parsley you can use fresh spinach.
