Jane's Lemon Dessert - Janes citrondessert

JANE'S LEMON DESSERT
Janes citrondessert

This lemony dessert is fluffy, almost soufflé-like.

Serves 4

1 cup sugar
2 tablespoons flour
3 tablespoons fresh lemon juice
2 eggs
1 cup milk


Beat sugar, flour, lemon juice, egg yolks and milk in a bowl over a simmering waterbath until it thickens a little. Beat the egg whites until stiff and gently add them to the bowl with the lemon mixture. Cover with a lid or aluminum foil and leave in the waterbath for about 55 minutes. Do not lift the cover while cooking.

Serve this lovely dessert and enjoy!
