RASPBERRY DESSERT

A fresh raspberry dessert is an excellent finish for a dinner. If you don't grow raspberries yourself, use frozen - it's just as good.
Serves 4
4 gelatin sheets = 2 teaspoons powdered gelatin
water
1 orange
9 to 10.6 oz fresh or frozen raspberries
0.6 cup sugar
1 cup plain yogurt
3 egg whites
Decoration:
whipped cream
flaked chocolate
Soak the gelatin sheets for 5 to 10 minutes in cold water. Wash the orange and grate the zest. Squeeze out 0.4 cup juice. Mix the berries in a food processor or mixer, then add sugar and grated orange zest.
Squeeze the gelatin and melt in its own moisture over a waterbath or in a saucepan on low het. Mix the melted gelatin with orange juice and stir this into the mashed berries. Allow to thicken slightly but not set. Add yogurt.
Beat the egg whites until stiff and gently turn them into the berries. Pour in a larger serving bowl or in smaller bowls or cups and store cold for 2 to 3 hours. Decorate with whipped cream and flaked chocolate when serving.
