RHUBARB DESSERT
Rabarberdessert
This delicious and easy-made rhubarb dessert is best when rhubarbs are at their finest and youngest. Serve with a fine vanilla sauce or cream.
Serves 4
Almost 1 lb 10 oz rhubarbs
1 cup water
1.2 cups brown sugar
1½ tablespoons potato flour
Sauce:
1.4 cups milk
2 eggs
2 tablespoons sugar
0.6 cup heavy cream
1 teaspoon vanilla sugar
Rinse the rhubarbs and peel if they are rough. Cut in pieces. Bring water and sugar to a boil, add the rhubarbs, cover and boil until tender. Stir the potato flour with some cold water and add the thickening while stirring. Bring just to boiling point, then remove.
Make the sauce. Mix milk, eggs and sugar in a saucepan. Let simmer while beating. Pour the sauce in a bowl and beat occasionally until cold. Beat the cream with vanilla sugar and stir this into the sauce.
