"SALMOND" (ALMOND SALMON)
WITH LEMON SAUCE

You probably have noticed by now that I love to play with the language, I do the same in Swedish. I've always loved learning and studying languages and I brought language books with me to our summer home to be able to study on rainy days. I sat there at my desk by the window and lost myself completely in English, German, French, Spanish and Italian (well, I had the Spanish practically for free as my father is from Barcelona). But now it's cooking time! I can prepare salmon recipes but not eat the dish when it's ready …
Serves 4
4 serving-sized, frozen pieces of salmon fillet
(in Sweden they weigh approx 4½ oz each)
1 tablespoon butter or margarine
1 teaspoon salt
some pepper
1 oz flaked almonds
1 tablespoon sesame seeds
Lemon sauce:
1.6 cups milk
0.8 cup cream, 15% fat or the like
1 vegetable bouillon cube
3 tablespoons flour
some salt
1 tablespoon fresh lemon juice
grated zest from 1 lemon
Brown the fish on both sides and flavor with salt and pepper. Put it in an oven-proof pan and sprinkle with almonds and sesame seeds. Put in the oven at 390F for about 10 minutes, until the fish is done.
Beat all ingredients for the sauce into a saucepan, bring to a boil while stirring and simmer for about 3 minutes.
Serve the "salmond" with broccoli, lemon sauce, boiled carrots and rice.
