VINEGAR CHICKEN
Vinägerkyckling
Serves 4
1 fresh chicken
1 whole head of garlic, preferably fresh
1 tablespoon butter
1 bay leaf
1 tablespoon finely chopped, fresh thyme
0.4 cup red wine vinegar
Cut the chicken in 4 pieces. Lightly crush the garlic with the end of the knife. If you can't find fresh garlic, use 3 ordinary garlic cloves and do the same way with them.
Heat the fat in a pan that you can serve the dish from. Sautée the garlic (with peel on) for a few minutes without browning. Add chicken and brown lightly on both sides. Flavor with herbs, salt and pepper. Pour on the vinegar and cover with a lid. Simmer the chicken for 30 to 40 minutes until the meat juices are clear when cutting with a knife just by the bone.
Serve with boiled vegetables and anything else you like.
