SAUERKRAUT LAMB
Lamm med surkål
Sauerkraut is good and healthy and is easy to combine with beef, pork or sausages. This is a version with lamb.
Serves 4 to 6
Approx 2 lbs bone-in lamb (brisket, shoulder
or back)
or 1 1/3 lbs boneless lamb
2 tablespoons butter or margarine
0.8 to 1.2 cups water
1½ teaspoon salt
1 bay leaf
8 to 10 whole cloves
2 teaspoon crushed caraway seeds
1 onion
2 cans sauerkraut, 1 can weighing 1 lb 3 oz
1 red bell pepper
Trim the meat and cut in pieces. Brown the fat in a frying pot or pan, then brown the meat, little by little, and take up when it's ready. Then put al meat back in the pan or in a large saucepan and add water. Add spices and sliced onion. Bring to a boil, cover and let simmer on low heat for about 40 minutes.
Add the sauerkraut. Bring it all to a boil and let boil for a few minutes. Rinse the bell pepper, trim it and shred it before adding it to the pot. Boil for another couple of minutes and flavor some more if you need to.
Serve with boiled potatoes, mustard, and bread, or just as it is.
