Sunday Patties - Söndagsbiffar

SUNDAY PATTIES
Söndagsbiffar

Serves 4 to 5

1 lb ground beef or 50/50 beef/pork
1½ teaspoons salt
2 tsk green peppercorns, lightly crushed
1 small, very finely chopped onion
1 egg yolk
7 oz fresh mushrooms
butter or margarine
1 tablespoon fresh lemon juice
0.6 to 0.8 cup heavy cream


Mix the ground meat with salt, half of the green peppercorns, onion and egg yolk, Trim and cut the mushrooms in pieces if large.

Shape the meat into 8 patties and fry them in some fat for 3 to 4 minutes on each side. Put them on a warm plate and cover with aluminum foil.

Wash the frying pan, put some fat in the pan and brown the mushrooms. Sprinkle with remaining green pepper and add lemon juice and cream. Flavor to taste with salt and boil for a couple of minutes. Pour the sauce over the patties and serve with boiled potatoes and a salad.
