Cheese and Walnut Pasta - Ostpasta med valnötter

CHEESE AND WALNUT PASTA
Ostpasta med valnötter

A hearty pasta where the cheese sauce gets some crunch from walnuts.

Serves 4

3 carrots
2 leeks
7 oz wholemeal pasta

Cheese sauce:
2 garlic cloves
butter or margarine
0.8 cup heavy cream
3/4 teaspoon salt
some black pepper
0.8 cup grated, ripe cheese like Cheddar
0.2 cup coarsely chopped walnuts


Peel the carrots and shred them with a potato peeler. Cut the leeks in long shreds. Peel and chop the garlic. Boil the pasta until al dente and add carrots and leek when half a minute is left of the pasta.

Sizzle the garlic in a saucepan, add cream and boil for a minute or so. Stir in salt, pepper, cheese and walnuts and serve with the pasta.
