When strawberries get cheaper and you have eaten enough fresh berries (as if you ever can …) maybe you would like to try out these pastries. You can make them in small pastry pans or pour it all in a roasting pan and then measure out round cakes from that.

Makes 8 large or 10 smaller pastries

3 eggs
0.6 cup flour
1 1/4 teaspoon baking powder
1 tablespoon potato flour

approx 4 cups strawberries
0.8 cup heavy cream (optional)


Grease 8 small round pastry pans or line a roasting pan with baking paper. Heat the oven to 480F.

Beat eggs and sugar very light and fluffy. Mix flour, baking powder and potato flour and turn this into the egg batter. Spread out the batter in the pans or in the roasting pan and bake for about 6 minutes or until the dough has puffed up, is nicely colored and done. Unmould on a rack and let cool under a cloth.

Rinse and trim the strawberries. Slice them and put them onto the pastries. If you've baked a square cake in the roasting pan, cut it in pieces or measure out round cakes. Decorate with whipped cream or serve with crème fraîche.
